Simply grind a mixture containing at least 20% pork or pork fat and then dissolve the seasoning in water, mixing thoroughly with the meat. To make sticks with the LEM Jerky Cannon®, start by using it to shoot the mixture onto a cookie sheet. Preheat your oven to 200° F, then place the sticks in the oven to bake until the internal temperature reaches 165° F. Alternatively, you can stuff the mixture into sheep casings or 17-21mm collagen casings. Smoke the stuffed casings in a smoker or bake them in the oven at 180° F until the internal temperature reaches 165° F. Each kit contains four pre-measured packets of seasoning and cure (each will make five pounds of snack sticks), 21mm edible smoked collagen casings, and directions.
